Brunch “Chaud Bouillon!”

Căng Tin & Aziadé Cirlini (VN-CH)

The Swiss-Vietnamese collective Căng Tin matches the act of eating and the design of objects in an unprecedented manner. This first multidisciplinary event is part of a larger research project on street food cultures in Vietnam. For foodculture days, Căng Tin focuses on the Lâm Đồng region, a former French colony, and renders the occupations traces visible that can be found in Vietnamese culture. Swiss artist Aziadé Cirlini is invited to design an in situ scenography and to redesign the main cooking “bánh mì xíu mại” pot. The latter will be used for the Sunday brunch, revealing social choreographies around the table. The meal includes Vietnamese specialties reinterpreted with regional Swiss products and through fermentation processes, and will be accompanied by a set of accessories specially designed for the occasion.

In collaboration with the entire team, the Lausanne-based artisan and producer Sooishi will also develop a new granola recipe. Natural wine selection by Yanis Carnal (Vins Vivants)

Five young people from Lausanne (CH) make up the multidisciplinary collective Căng Tin: Cynthia Mai Ammann, Valentin Kaiser, Quang Vinh Nguyen, Zoé Nguyen and Matheus Vo-Ngoc. Their common ground is their Vietnamese origin, total or partial, as well as a deep interest in the eating practices in Vietnam.

Aziadé Cirlini, artist and chef, works between Geneva and Lohn. Her work is interested in food and all that surrounds it: how can one create a situation where the act of eating puts movement into question? How to create the right object in order to support a dish? How do we situate ourselves in front of a dish that seems strange to us?
